Spiced Carrot Turnip Soup

This spiced soup is perfect for brightening those cold winter evenings.
Ingredients
- 2lb Carrot
- 1lb Turnips
- 1 med onion
- 1 stalk celery
- 1 bay leaf
- 1 Tbl Thyme
- 1 Tbl Cinnamon
- 1 tsp allspice
- 1 tsp cloves
- 1 tsp nutmeg
- 1 Tbl salt
- 1 tsp black pepper
- 1/4 cup olive oil
- Water
Instructions
- Clean and cut all the vegetables into 1” pieces
- Sweat all the vegetables over a low flame in the olive oil and the spices
- Once all the vegetables are soft fill the pot up to the top of the vegetables with water
- Bring to boil
- Ladle into blender (search for bay leaf in the process and remove)
- Puree until a smooth consistency has been achieved
- Serve hot and garnish with thinly sliced carrot
